Corn Vegetable Raita


1 cup mixed boiled vegetables ( cauliflower, green peas, carrot, french beans), ¼ cup boiled finely chopped potatoes, 2 tbsp finely chopped onion, ¼ cup boiled sweet corn, 2 cup strained curd, salt to taste, 1 tsp oil, 1 pinch mustard seeds, 1 finely chopped green chilies, few curry leaves.



1) Heat oil, add mustard seeds, curry leaves, green chilies, add onion, then potatoes, then add all mixed vegetables, corn and off the flame (do not cook) 2) Add this mixture to the strained curd, add salt. 3) Garnish with red chili powder, cumin seeds powder and coriander leaves.
